Trio of mushrooms

Serves: 2

Ingredients

Mushroom soup with sherry

  • 1 leek
  • 1 clove garlic
  • 200g mushrooms
  • 1 tbsp butter (President)
  • 1 tbsp flour
  • Thyme and bay leaf
  • 500ml mushroom stock (Star Porcini)
  • Fresh cream (Benna)
  • Tot sherry liquor
  • Fresh seasoning

Crispy mushroom cigars

  • 1 finely chopped onion
  • 100g mushrooms
  • 50g diced pancetta
  • 200g cream cheese
  • 2 tbsp grated parmesan
  • Chopped parsley
  • Filo pastry
  • Melted butter

Fried mushrooms

  • 6 small mushroom cups
  • Gorgonzola cheese
  • Nibbed hazelnuts
  • Flour for dusting
  • Breadcrumbs
  • 1 beaten egg

Method

Peel & chop the leek & garlic, cook in hot melted butter, stir in the mushrooms & the herbs. Stir in the flour and cook for a further minute. Pour in the stock and cream, cook for 10 minutes. Remove herbs, whizz into a puree, bring to the boil, season with salt & pepper and flavour with the sherry.
