Trio of mushrooms
Serves: 2
Ingredients
Mushroom soup with sherry
- 1 leek
- 1 clove garlic
- 200g mushrooms
- 1 tbsp butter (President)
- 1 tbsp flour
- Thyme and bay leaf
- 500ml mushroom stock (Star Porcini)
- Fresh cream (Benna)
- Tot sherry liquor
- Fresh seasoning
Crispy mushroom cigars
- 1 finely chopped onion
- 100g mushrooms
- 50g diced pancetta
- 200g cream cheese
- 2 tbsp grated parmesan
- Chopped parsley
- Filo pastry
- Melted butter
Fried mushrooms
- 6 small mushroom cups
- Gorgonzola cheese
- Nibbed hazelnuts
- Flour for dusting
- Breadcrumbs
- 1 beaten egg
Method
Peel & chop the leek & garlic, cook in hot melted butter, stir in the mushrooms & the herbs. Stir in the flour and cook for a further minute. Pour in the stock and cream, cook for 10 minutes.
Remove herbs, whizz into a puree, bring to the boil, season with salt & pepper and flavour with the sherry.
