Sweet pearl barley and mixed berry ramekins

Serves: 4

Ingredients

  • 75g unsalted butter
  • 100g caster sugar
  • 1 egg
  • 60g plain yogurt
  • 1 tsp vanilla essence
  • Zest of a lemon
  • 150g cooked pearl barley
  • 125g plain flour
  • 1 tsp baking powder
  • 150g mixed frozen berries
  • 1 tub crème fraiche for serving
  • You will also need 4 buttered ramekins

Method

Beat together the butter and sugar till light then mix in the yogurt, vanilla essence and lemon zest. Fold in the barley, plain flour and baking powder. Throw in the frozen berries and spoon the mixture into the ramekins. Bake in the oven at 180`c for 25-30 minutes until cooked through. Serve whilst still warm with a spoon of crème fraiche on top.
