Stuffed Maltese hobza
Serves: 2-4
Ingredients
- 1 small round Maltese hobza
- 1 potato, boiled and sliced
- 50g black olives, stones removed
- 1 large tin tuna, drained
- 150ml tomato salsa
- 2fresh Gozitan cheeselets (Gbienet)
- 1 large tomato, sliced
- Freshly chopped basil and parsley
- Chopped garlic
Method
Cut the top off the Maltese bread. Remove the inside, leaving just the crust. Place the ¼ of the bread that you have removed into a food processor, add some basil, parsley and chopped garlic and pulse till you have a nice herbed bread crumb mixture. You can now start filling the loaf by starting with a layer of sliced potatoes. Next, add a layer of tomato salsa and sliced tomatoes. Continue by adding a layer of tuna, followed by some black olives. Cover the olives with a layer of the herbed breadcrumbs. Repeat the whole process again, till the bread is completely filled and the last layer is the herbed breadcrumb mixture. Drizzle with some olive oil and wrap up the bread in baking paper or foil. Bake for 20 minutes, at 180`c. Serve the stuffed Maltese bread either hot or cold.
