Spiced turkey flatbreads with hummus and feta

Ingredients

For the flatbread

  • 250g plain flour
  • ½ tsp dried yeast
  • 2 tbsp. olive oil (Borges)
  • 1 tsp toasted cumin seeds
  • Good pinch salt and smoked paprika
  • 100ml warm water
  • You will also need
  • 200g homemade hummus
  • Left over turkey or chicken, pulled
  • Left over grilled or cooked vegetables (peppers, aubergine)
  • 100g feta cheese, crumbled (Camel brand)
  • Fresh coriander leaves
  • 2 tbsp. plain yogurt (Benna)

Method

Start this recipe by making the flatbreads. Mix all the ingredients together to form a dough and allow to sit in a warm place for 45 minutes. Knock out the air and form into 4 balls. Roll each ball out on a lightly floured work surface to the size of a side plate. Heat a pan with olive oil and fry the flatbreads on both sides for 2 minutes until cooked through. To serve, spoon the hummus over the flatbread, followed by the cooked vegetables and crumbled feta cheese. Finish off with a drizzle of plain yogurt, olive oil and fresh coriander leaves.

  • ħaxix mixwi jew imsajjar – bżar ikkulurit u brunġiel
  • 100g ġobon feta mfarrak
  • weraq frisk tal-kosbor
  • 2 imgħaref jogurt plain

Method

Ibda din ir-riċetta billi tagħmel il-flatbreads. Ħallat l-ingredjenti kollha flimkien biex tifforma għaġina u ħalliha toqgħod f’post sħun għal 45 minuta. Oħroġ l-arja minnha u fformaha f’4 blalen. Irrombla u iftaħ kull ballun fuq wiċċ bid-dqiq għad-daqs ta’ platt żgħir. Saħħan taġen biż-żejt taż-żebbuġa u aqli l-ħobż ċatt miż-żewġ naħat għal 2 minuti sakemm ikun imsajjar. Biex isservi, poġġi l-hummus fuq il-flatbread, segwit mill-ħaxix imsajjar u l-ġobon feta mfarrak. Spiċċa bi ftit jogurt plain, żejt taż-żebbuġa u weraq frisk tal-kosbor.
