Roasted cherry tomatoes with basil whipped ricotta and toasted garlic bread

Ingredients

  • 250g ricotta (Hanini)
  • Good drizzle olive oil
  • 5-6 fresh basil leaves
  • Salt and pepper to taste
  • 2 handfuls yellow and red cherry tomatoes
  • Good pinch oregano
  • 1 globe garlic, roasted whole
  • 1 tbsp softened butter (Valio)
  • Few slices crusty bread
  • 1 tbsp chopped parsley

Method

Start this recipe by roasting the tomatoes. Place onto a baking tray, season with salt, pepper, oregano and drizzle with olive oil. Roast in the oven at 160°C for 20-25 minutes. Meanwhile, mix together the pulp of the roasted garlic globe with the softened butter and spread onto the sliced crusty bread. Toast in the oven till crispy. For the whipped ricotta, blitz together a good drizzle olive oil, ricotta, basil and season with salt and pepper. Spoon the basil whipped ricotta into 2 deep plate and arrange the roasted tomatoes on top. Drizzle with olive oil, sprinkle over the chopped parsley and serve with the toasted garlic bread.
