Parmesan crusted lampuki fillets on sweet potato caponata

Ingredients

  • 2 eggs
  • 2 tbsp. flour
  • 2 tbsp. grated cheese (Camel)
  • 2 lampuki fillets
  • Olive oil for frying
  • 1 sweet potato, peeled and diced
  • 1 knob butter
  • 1 yellow pepper, diced
  • 1 small zucchini, diced
  • ½ small aubergine, diced
  • 3 gloves garlic
  • 2 medium tomatoes, diced
  • 2-3 tbsp. tomato pulp
  • Salt and pepper to season
  • 80g cooked butter beans (Camel)

Method

Place the eggs, flour and Parmesan in a medium bowl and whisk together. Dip in the lampuki fillets to coat and immediately shallow fry in olive oil until browned. Meanwhile, blanch and cook the diced sweet potato. Heat the butter in a pan and sauté` together the until diced pepper, zucchini and aubergine for 10-15 minutes before adding in the blanched potato, diced tomatoes and tomato pulp. Continue to cook for a further 5-7 minutes then remove off the heat. Season well with salt and pepper, stir in the cooked butter beans and serve into plates with the lampuki fillets on top.

  • bżaru kkulurit isfar
  • qarabagħlija żgħira
  • nofs brunġiela żgħira
  • 80g fażola bajda
  • 3 sinniet tewm
  • 80g polpa tat-tadam

Method

Poġġi l-bajd, id-dqiq u l-parmiġġjan fi skutella medja u ħawwad flimkien. Għaddas il-fletti tal-lampuki biex tiksi bit-taħlita u aqli immedjatament fiż-żejt taż-żebbuġa sakemm jismaru. Sadanittant, saffi u sajjar il-patata ħelwa mqattgħa f’biċċiet. Saħħan il-butir ġo taġen u sajjar flimkien il-bżar imqatta’, il-qarabagħli u l-brunġiel għal 10-15-il minuta qabel ma żżid il-patata (blanched), it-tadam imqatta’ u l-polpa tat-tadam. Kompli sajjar għal 5-7 minuti oħra, imbagħad neħħi minn fuq in-nar. Ħawwar sew bil-melħ u l-bżar, ħawwad il-fażola bajda msajra u servi ġo platti bil-fletti tal-lumpuki fuq nett.
