Parma ham and Greek goat’s cheese baked parcels

Ingredients
- 1 block Greek goats cheese (Fior di Vita)
- 4 slices of Parma ham or serrano ham (Casademont)
- 2 tbsp fig jam (Mackays)
- 2 sheets filo pastry
- 50g melted butter (Valio)
- 1 sprig fresh thyme
- 1 tbsp honey
- 1 tbsp chopped toasted walnuts (Lamb brand)
- Few salad leaves for serving

Method
Start by melting the butter with the thyme leaves. Turn off the heat and allow to infuse for a few minutes. Next, unwrap the goats` cheese and cut into 2 pieces. Spoon the fig jam on top and wrap up each piece with 2 slices of parma or Serrano ham. Next, lay out the 2 large sheets of filo pastry and brush with the butter. Fold in half, brush again with butter and place the wrapped cheese on top. Fold up in the pastry and place onto a lined baking sheet. Brush again with butter and bake in the oven at 200°C for 20-25 minutes or until golden brown. Serve immediately drizzled with honey, chopped toasted walnuts and a small side salad.
