One-Pot Pasta with Sun-Dried Tomato & Mascarpone Sauce

Ingredients

  • 250g fusilli or penne
  • 1 tbsp olive oil
  • 1 onion, roughly chopped
  • 3 garlic cloves, crushed
  • 1 tbsp Italian seasoning
  • 400g can chopped tomatoes (Mayor)
  • 80g tomato paste (Mayor)
  • 6 sun-dried tomatoes (Camel Brand)
  • 2 tbsp marinated vegetables (Camel Brand)
  • 1 tbsp balsamic vinegar
  • 500ml boiling water
  • Large handful of basil leaves
  • 150g rocket leaves
  • 4 tbsp mascarpone (Zanetti)

Method

In a large pot, heat some olive oil and gently brown the onions until soft. Add the garlic and Italian seasoning, and cook for a further 1 minute. Add chopped tomatoes, tomato paste, sun-dried tomatoes, marinated vegetables, salt and balsamic vinegar. Cook for 5 minutes until it starts to bubble. Add the pasta along with the boiling water. Do not worry, at this stage the sauce will be very watery.  Bring to the boil, and then simmer for 10-12 minutes, stirring often, until the pasta has cooked and the sauce thickened. Add the basil and rucola until the leaves are fully wilted.

Finally, stir in the mascarpone until melted. Season accordingly.
