Creamy chicken pies

Ingredients

  • 1 onion or small leek, finely chopped
  • 2 gloves garlic, chopped
  • 1 tsp dried thyme or mixed herbs
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 carrot, peeled and diced
  • 1 cup peas (Emborg)
  • Salt and pepper to taste
  • 2 tbsp plain flour
  • 400-500ml warmed milk
  • 1 chicken stock pot (Knorr)
  • 800g cooked roasted chicken, cut into chunks
  • 2 sheets rectangular puff pastry (Acqua e Farina)
  • 1 beaten egg to glaze
  • 1 tbsp sesame seeds

Method

Start by softening the onion or leek with the carrot, garlic, butter and oil for 3-4 minutes. Season with salt and pepper , dried herbs and stock pot. Mix in the flour, cooking for 1 minute then gradually stir in the warmed milk to form a sauce. Remove off the heat and mix in the cooked chicken. Next, butter the rim of small individual ramekins with butter and spoon in the chicken filling. Unroll the puff pastry, cut out rounds and use to cover the ramekins. Secure the edges, brush with beaten egg and sprinkle the top with sesame seeds. Bake in the oven at 200°C  for 25-30 minutes.
