Nut crusted goat cheese timbale

Ingredients

  • 50g peeled pistachios, chopped
  • 80g peeled walnuts, chopped
  • 2 tbsp. chopped parsley
  • 150g plain gbejna roll (Hanini)
  • 50g cranberry sauce (Colman’s)
  • 2 peaches
  • 100g tinned chickpeas, drained
  • 1 tbsp. tahini
  • 2 cloves garlic
  • 2 tbsp. olive oil
  • 2 tbsp. mixed frozen berries (Asiago)
  • 1 tbsp. honey

Method

Start by mixing together the berries and honey and put aside. Mix together the chopped nuts and parsley and place into a flat plate. Brush the gibna roll with cranberry sauce and roll into the nut mix, coating evenly. Cut the peach in thin wedges and grill  in a hot pan with a little olive oil to brown. Meanwhile, make a dip by blitzing together the chickpeas, tahini, garlic and olive oil in a food processor. Season well.

Cut the goat cheese in slices and layer them with the peach and chickpea dip, repeating the process twice. Serve with the honey berry mixture drizzled around.

  • 50g zalza tal-cranberry
  • 2 imgħaref tursin imqatta’
  • 2 ħawħiet
  • 100g ċiċri
  • mgħarfa tahini
  • 2 sinniet tewm
  • 2 imgħaref żejt taż-żebbuġa
  • 2 imgħaref berries tal-friża mħallta
  • mgħarfa għasel

Method

Ibda billi tħallat flimkien il-berries u l-għasel u warrabhom. Ħallat flimkien il-ġewż imqatta’ u t-tursin u poġġi ġo platt ċatt. Iżbogħ il-ġbejna roll biz-zalza tal-cranberry u għaddi minn taħlita tal-pistaċċi u l-ġewż, u iksi indaqs. Qatta’ l-ħawħ f’biċċiet irqaq u ixwi f’taġen jaħraq bi ftit żejt taż-żebbuġa sakemm jismar. Sadanittant, agħmel dip billi tħawwad flimkien iċ-ċiċri, it-tahini, it-tewm u ż-żejt taż-żebbuġa fi processor tal-ikel. Ħawwar sew. Qatta’ l-ġbejna fi flieli u idlek bid-dip tal-ħawħ u taċ-ċiċri. Irrepeti l-proċess darbtejn. Servi bit-taħlita tal-frott u bl-għasel imxerrda madwar.
