Mini chicken and pancetta parcels with cranberry jam

Ingredients
- 1 large chicken breast, cut into 1 inch strips
- 1 tsp butter substitute (Flora Cuisine)
- 1 tsp chopped fresh thyme
- 12 slices pancetta
- 2 tbsp cranberry sauce
- 1 sheet rolled puff pastry (30cm x 20cm)
Method
Heat the butter substitute in a frying pan and quickly seal the chicken pieces on all sides with the chopped thyme. Remove the chicken pieces from the pan and allow to cool down slightly. Next, wrap the chicken pieces in the pancetta. Spread the cranberry sauce over the puff pastry and place on the pancetta wrapped chicken in a line. Roll up the chicken completely in the puff pastry, like sausage rolls. Cut off any excess pastry and place the chicken onto baking sheets covered with non-stick baking paper and bake in the oven at 200`c for 20-25 minutes. Remove from the oven and cool slightly before cutting into small portions
