Maltese sausage Mac `n` Cheese

Ingredients

  • 200g cooked short macaroni pasta
  • 1 shallot peeled and finely chopped
  • 2 Maltese sausages
  • 200g mushrooms
  • 100g butter
  • ¼ tsp cayenne pepper
  • 100g flour
  • 500ml warm milk (Natrue)
  • ½ tsp grated nutmeg
  • 1 packet smoked cheese (Gobon tan-Nar)
  • 1 packet peppered cheese (Gobon tan-Nar)
  • 1 small packet galletti, crushed
  • 2 garlic cloves
  • 1 tbsp. chopped parsley

Method

Remove the casings and crumble the sausages. Melt the butter in a double bottom saucepan and cook the onion and the sausage meat in.

Next, add in the mushrooms and cook for a further minute. Stir in the flour and cayenne pepper, mix till a paste forms and cook over the heat for 2 minutes, stirring continuously. Gradually pour in the warm milk mixing until the sauce thickens. Remove from heat and grate in ¾ of each cheese then mix in the pasta. Spoon into serving dishes and grate the remaining cheese on top. Bake in a very hot oven until the cheese melts and is bubbling.

In a separate frying pan, cook the garlic in olive oil till slightly browned, stir in the galletti and parsley, toss to cover in the garlic oil and sprinkle with the parsley. Serve the macaroni cheese with the galletti crumbs.
