Gluten-free focaccias with tomatoes, hummus, avocado and cottage cheese

Method
Strat this recipe by making some hummus. Blitz together the chickpeas, 1 tbsp. olive oil, 1 clove garlic and season with salt and pepper. Also, drizzle the gluten-free focaccia with oil and season with salt and pepper. Warm in a hot oven to toast slightly. When ready, top with hummus or cottage cheese and decorate with sliced Parma ham, avocado, cherry tomatoes and mini mozzarella pearls. Drizzle with balsamic reduction and olive oil and serve.
