Festive almond and fruit puff pastry stars

Ingredients
For the filling
- 2 eggs (Le Naturelle)
- 150g ground almonds (Good Earth)
- 150g caster sugar
- 1 tsp vanilla extract
- 70g mixed dried fruits (Good Earth)

- 500g puff pastry, rolled out
- 1 egg, beaten (Le Naturelle)
- 100g icing sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 50g flaked almonds, lightly toasted
- 1 small tub red glace cherries, cut in half

Method
Start by making the almond filling. Mix together the ground almonds, sugar, eggs and vanilla to make a spreadable mixture. Stir in the mixed dried fruits. Rolled out the puff pastry into a large square and cut into 12 cm squares. Brush all over lightly with beaten egg and cut the corners using a knife. Place a tablespoon full of the filling into the center of each square and press the corners into the middle like a star. Place onto baking sheets lined with non stick paper, glaze the tops with egg. Bake in the oven at 200°C for 30 minutes or until golden brown. Make a glaze by mixing together the icing sugar and vanilla with a little warm water and brush over the stars. Immediately decorate with flake almonds, a sprinkle of cinnamon and a cherry half in the middle.
