Sweet whipped ricotta cream with orange, raspberries and ginger crumb

Ingredients

  • 500g ricotta (Hanini)
  • 50g icing sugar (Lamb brand)
  • 1 tbsp honey
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 100g ginger biscuits, crushed (Strand Palace)
  • 25g melted butter (Valio)
  • 1 box fresh raspberries

Method

Start by mixing together the crushed biscuits and butter and put aside. Place the ricotta, honey, icing sugar, orange zest and vanilla into a food processor and blitz till smooth. Next, spoon half of the crushed biscuits into the base of 3 or 4 glasses. Spoon over half of the whipped ricotta and place on half of the raspberries. Repeat the process again and chill for 1 hour before serving.
