Duo of sesame prawns and Maltese sausage on toast with a honey soy sauce



For the prawn toast

  • 3 slices bread (Golden Harvest)
  • 1 tsp grated ginger
  • 1 clove garlic
  • 1 egg white
  • 1 tsp cornflower (Lamb Brand)
  • 1 tbsp sesame oil
  • 4 tbsp sesame seeds
  • 300g well drained cocktail prawns

For the Maltese sausage toast

  • 3 slices white toast
  • 1 Maltese sausage
  • 2 tsp cornflower (Lamb Brand)
  • 12 hazelnuts, roasted and crushed (Lamb Brand)
  • 1 egg white
  • 1 tbsp walnut oil

For the honey and soy sauce

  • 1/2 onion
  • 6 tbsp honey
  • 6 tbsp soy sauce
  • 2 cloves garlic
  • 1 knob butter
  • 1/2 tsp grated ginger


To make the prawn toast, blend well in a paste the ginger, garlic, egg white, cornflower, sesame oil and prawns. Meanwhile toast lightly the bread without coloring and press the paste well on it, sprinkle with sesame and press. Fry in a sauté pan until browned and cut in shapes. To make the sausage toast, blend well the Maltese sausage, cornflower, egg white and walnut oil in a paste, toast the bread lightly and press the paste well, sprinkle with hazelnut and press again. Shallow fry until browned. To make the sauce, soften the chopped onion and garlic in a pan, add the honey and ginger and bring to the boil till it starts browning, add soy sauce mix well and remove from heat.
