Baked berry panettone pudding

Ingredients

For the custard
250ml fresh cream (Benna)
250ml milk (Benna)
3 eggs
60g caster sugar (Lamb Brand)
2 tsp vanilla extract

You will also need
1 x 500g panettone of your choice
250g mixed frozen berries
80g butter (Benna)
2 tbsp caster sugar
1 tsp ground cinnamon
1 tbsp icing sugar and fresh berries to decorate

Method

Start this recipe by greasing a 30cm round oven dish with butter. Cut the panettone into thick squares and place into a large bowl. Next, make the custard by whisking all the ingredients together the cream, milk, vanilla and 60g sugar. Pour over the panettone, mix through and allow to soak in for 20 minutes. When ready, mix in the frozen berries and pour the mixture into the greased baking dish. Melt together the 80g butter, 2 tbsp caster sugar and cinnamon and drizzle over the top. Place in a baine-marie so the water comes half way up the dish. Bake in the oven at 200`c for 30-35 minutes or until golden. Serve decorated with fresh berries and a generous dusting of icing sugar.
