Apple and pecan cobbler with maple syrup

Ingredients
For the filling
5 granny smith apples, peeled, cored and diced
Juice ½ lemon
30g butter (Benna)
3 tbsp light brown sugar
2 tsp cinnamon
Pinch nutmeg
Pinch cloves
1 tsp mixed spice
2 tbsp corn flour
5 tbsp water
For the topping
100g caster sugar (Lamb brand)
180g plain `00` flour (Lamb brand)
2 tsp baking powder
1 tsp cinnamon
Pinch salt
110g softened unsalted butter (Benna)
150g plain yogurt (Benna)
100g pecans, chopped (Lamb brand)
You will also need maple syrup and vanilla ice-cream for serving
Method
Start with the filling. Squeeze the lemon juice over the diced apples to stop them from browning. Heat the butter in a pan and cook the apples with the sugar and spices for 10 minutes or until soft. Mix the corn flour with the water and mix in. Spoon the apples into a deep baking dish. Next, make the topping by placing the sugar, flour, cinnamon, salt and baking powder into a bowl. Rub in the softened butter to form a crumb then mix in the buttermilk using a spoon. Dollop this mixture over the apples and toss over the pecans. Bake in the oven at 180`c for 35-40 minutes or until golden. Serve hot drizzled with maple syrup and a scoop of vanilla ice-cream.
