Apple and cinnamon bread pudding

Ingredients
- 600g white sliced bread
- 1 x 381g tin evaporated milk
- 380ml water
- 80g butter or margarine, melted
- 6 heaped tbsp brown sugar (Lamb brand)
- 4 heaped tsp cinnamon
- 1 tsp mixed spice
- Grated zest and juice 1 orange
- 150g chopped pecan nuts (Lamb brand)
- 2 apples, peeled, cored and diced
- 100g sultanas (Lamb brand)

Method
Start this recipe by placing the sliced white bread into a large bowl with the evaporated milk and water and squash together using your hands. Allow to sit for 5 minutes. Add in the melted butter, 4 tbsp brown sugar, 3 tsp cinnamon and mixed spice, orange juice and zest, 100g pecans, diced apple and sultanas and mix together well. Line a large baking tin with baking paper and pour in the bread pudding mixture. Even out and sprinkle over the remaining 2 tbsp brown sugar, 50g pecans and 1 tsp cinnamon. Bake in the oven at 200°C for approximately 30-35 minutes. The pudding can be decorated with glace icing if you wish.
