Vegetable pie in filo pastry

Ingredients

  • 200g boiled potatoes
  • 100g leeks
  • 1 onion
  • 1 garlic
  • 2 eggs
  • Salt and pepper
  • 6 filo pastry sheets
  • 50g butter
  • 20ml fresh cream

Method

Dice the onions garlic and leeks, then shallow fry for 4 minutes in olive oil. Gradually add the boiled potatoes and cook for another 4 minutes till the potato come mash, and let cool, Meanwhile brush the oven baking pan with melted butter and place the filo sheets. When mixture cools down add the eggs and cream mix and pour in the baking pan, Then cover the top with the filo pastry and bake for 10 minutes at 160`c.
