Grouper with Parma ham, basil and nut dressing

Ingredients
- 200g Grouper
- 2 slices Parma ham
- 50g fresh Basil
- 10g pine nuts
- Salt and pepper
- 50ml olive oil
- 10g French mustard
- 1 lemon
Method
Starting by portion the grouper, squeeze the lemon and brush with French mustard then cover the grouper with Parma ham and bake for 20 minute at low heat 120 degree Celsius with some fish stock in the bottom of the pan. Meanwhile blitz the basil, nuts and oil for the dressing and serve.
