Baked macaroni cheese

  • 200g Cheddar cheese, grated
  • 200g macaroni
  • 100g ricotta
  • 10ml cream
  • 2 eggs
  • 1 tomato, chopped
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 2 rashers bacon, chopped

Method

Bring a large saucepan of water to the boil with 2 tablespoons salt. Add the macaroni and cook for 6

minutes, then drain and cool under cold running water. In a separate bowl mix the ricotta, cream, eggs and the half cooked macaroni. Meanwhile heat a pan and cook the chopped onions, garlic, bacon and tomato together for a few minutes. Mix into the pasta mixture along with the grated Cheddar cheese and place into an ovenproof dish. Bake for just 10 minutes and serve.
