Marinated salmon with tempura mussels
Ingredients
For the salmon
- 200g salmon fillets
- 6 mussels
- 100g leeks
- 50g onions
- 50g garlic
- 30g ginger
For the tempura
- 1 egg white
- 25g corn flour
- 25ml cold water
Method
Cut the salmon fillets into strips and marinate with the lemon, leeks ,onions, garlic, ginger and some olive oil and season well with salt and pepper. Marinate for 10 minutes. To make the tempura, mix together the corn flour with a little cold water together. In a separate bowl, whisk egg whites till fluffy consistency and in the corn flour mixture. Dip the mussels in mixture and fry in some hot oil. Meanwhile, heat a large griddle pan and cook the salmon for 2 minutes on each side. Serve the tempura mussels with the pan fried marinated salmon.
