Chicken, fig, Parma ham and ricotta salad with peanut and sesame dressing.
Serves:
Ingredients
- 400g chicken breast
- 8 slices Parma ham
- 4 fresh figs
- 400g ricotta
- Parsley
- ½ tsp nutmeg
- 1 tbsp olive oil
- 1tbsp sesame oil
- Salt and pepper
- Salad leaves
Method
Blend the sesame oil and olive oil. Cut the chicken breast in fingers, pass through oil and grill. In the meantime mix the ricotta, nutmeg and parsley and season to taste. For the dressing; mix all the ingredients and if needed add some water to balance the consistency. Lay the salad together with the ricotta, Parma ham slices and wedges of figs. Place chicken semi-warm on salad, dress and serve.
