Red velvet muffins with white chocolate and hazelnuts
Serves:
Ingredients
- 220ml butter milk
- 250g flour
- 300g sugar
- 120g lard or unsalted butter
- 1 tbsp cocoa powder
- 2 eggs
- Vanilla essence
- 1-2tbsp red color
- ½ tbsp lemon juice
- 1 tbsp baking soda
Method
In a bowl mix sugar and lard until blended smoothly. Add the eggs and cream the mix. Sift the flour and coco powder together. Divide the flour mix in three equal amounts, and the butter milk in two equal amounts. Fold in flour first than butter milk, and repeat, finish off with the flour. In a cup, combine the lemon juice, red color and the baking soda, the mix will start frothing, fold in straight away and bake for 15-20 minutes in pre-heated 180`c oven.
