Watermelon and sambuca gazpacho

Serves:

Ingredients

  • 1 kg seedless watermelon
  • 1 large cucumber
  • 2 large ripe tomatoes
  • 1 small onion
  • 1 green pepper
  • 1 small fresh chili pepper
  • 8 fresh basil leaves
  • 8 fresh mint leaves
  • 1 tbsp extra virgin olive oil
  • 1 tbsp sugar
  • 3 tbsp Sambuca

Method

Deseed and skin the cucumber and the tomatoes. Cut the watermelon and make sure there are no seeds. Put all the ingredients in a blender and puree’. Season to taste and serve chilled.
