Braised quail with orange and ginger
Serves: 2
Ingredients
- 2 quails
- 30g ginger
- 6 rashers bacon
- 20ml oil
- 50g butter
- Fresh seasoning
- 200ml chicken stock
- 1 large onion
Method
Preheat a thick bottomed pan and seal the quails on both sides and baste with a little oil and butter. Wrap up in the bacon, add the chicken stock, squeeze in the orange juice and add the finely chopped ginger. Braise gently for 30 minutes in oven until soft and tender.
