Spicy chicken breast with caramelized onion and spinach

Serves: 1

Ingredients

  • 1 chicken breast
  • 10g chilli peppers
  • 1 large onion
  • 200g spinach
  • 1 egg
  • 20g grated cheese
  • 4 cloves garlic
  • 100ml chicken stock
  • Fresh seasoning
  • 20g butter
  • 100ml red wine

Method

In a medium sized pan, cook the spinach for 2 minutes and cool immediately .In a separate frying pan, seal the chicken from both sides together with the finely chopped chili peppers, then continue to cook in oven for 20 minutes at 160`c. Meanwhile, in the same frying pan cook the onions, garlic and spinach. Add the egg and cheese to form a frittata and cook. Make a sauce by reducing the red wine by half and add the chicken stock. Continue to reduce by half again before whisking in the butter. Serve with the chicken and spinach frittata.
