Warm chocolate brownies with vanilla ice-cream

Ingredients
- 40g plain flour
- 1 tsp baking powder
- 25g cocoa powder
- 140g plain chocolate, melted (NOVI)
- 3 eggs
- 225g caster sugar
- 1 tsp vanilla essence
- 110g mayonnaise (HELLMANN`S)
- 55g walnuts, finely chopped
- You will also need vanilla ice-cream and golden syrup for serving
Method
Lightly grease a 23cm square cake tin and line with baking paper. Sift together the flour, baking powder and cocoa powder in a bowl and put aside. In another bowl, whisk together the eggs, sugar and vanilla essence until slightly thickened. Whisk in the melted chocolate, before folding in the flour mixture, mayonnaise and chopped walnuts. Pour the brownie mixture into the prepared cake tin and bake in the oven at 160°C for about 30-35 minutes, or until a skewer inserted in the centre comes out clean. Remove the cake tin from the oven and allow the brownies to cool down slightly before cutting into squares. Serve the warm brownies in large plates with a scoop of vanilla ice-cream on top. Drizzle generously with golden syrup and serve.
