Warm tomato and feta tart with caramelized onions and a balsamic reduction

Ingredients

  • 4 filo sheets
  • 1 tsp thyme leaves
  • 50g butter
  • 2 red onions
  • 3 ripe tomatoes
  • 100g feta cheese
  • 1 mango
  • 2 tsp sugar
  • bunch rocket
  • bunch basil leaves
  • 2 tbsp balsamic glaze (Borges)

Method

Using a medium sized round Cutter cut the filo in circles, melt the butter and mix in the thyme leaves, make 2 tartlet bases by placing the filo one on each other brushing with butter between each layer and at the top. Bake at 180 degrees Celsius until browned and allow to cool. Slice the onions and on high heat saute in butter, add the sugar, caramelize than add the diced mango. Allow mango to soften than add the tomatoes cut in wedges, toss for 1 minute on medium heat and remove from heat. Place the filo wafer in the middle of the plate with the tomato mix on. Meanwhile cut the feta in cubes and mix together with the basil and rocket to garnish on top, drizzle with the balsamic glace.
