Vegan flan

Ingredients
- 1 sheet puff pastry with margarine
- 1 jar beetroot and apple chutney
- 2 vegan sausages (Quorn)
- 1 small aubergine
- Small bunch baby spinach
- 1 figs
- 1 peach
- 8 pcs cherry tomatoes
- 1 onion
- 3 tbsp sugar

Method
Cut the flan rectangular the largest possible and place on an oven tray use the loose ends to make a 3 cm edge around the pastry. Dilute the beetroot jam and brush the pastry with it. Bake the pastry at 220 deg celsius until golden brown.
Meanwhile saute the onions with sugar and caramelize, saute the spinach in olive oil and cut the grilled tomatoes, sausages and peach. Dice the aubergine, season and saute.
Use the rest of the jam to cover the base of the flan once cooked and decorate nicely with the cooked ingredients.
Warm in the oven for 5 minutes at 190 deg and serve.
