Tuna salad Nicoise with aspragus
Serves:
Ingredients
For the salad
- 2 x 120g tins tuna, drained
- Handful French beans, blanched
- 10 black olives
- 8 new potatoes, cooked
- 8 Asparagus stems, blanched
- 2 eggs, hard boiled
- 6 cherry tomatoes, halved
- Anchovies, optional
For the dressing
- 1 tsp Dijon mustard
- Juice of a lemon
- 3 tbsp olive oil
- 2 cloves garlic, chopped
- Fresh seasoning
Method
Make up the dressing by mixinfg all the ingredients together. Put the salad together and drizzle over the mustard dressing.
