Sweet baked apple and cinnamon pudding

Ingredients

  • 3 apples, peeled, cored and diced
  • 1 tbsp. unsalted butter
  • 2 tsp ground cinnamon
  • ½ tsp ground mixed spice
  • 3 tbsp. golden sultanas
  • 165g plain couscous (Tipiak)
  • 300ml double cream (Elmlea)
  • 600ml whole milk
  • 150g caster sugar
  • 1 tsp vanilla extract
  • 1 extra tbsp. sugar and pinch nutmeg for the top

Method

Start by cooking the apples and sultanas in the butter with the spices for 5 minutes till soft. Meanwhile, place the cream, milk, sugar, vanilla extract into a large saucepan and bring almost to the boil. Take off the heat and stir in the cooked apple mixture followed by the couscous. Mix together well then pour into a greased 1 ½ litre ovenproof dish. Sprinkle over the extra sugar and the nutmeg and bake at 165`c for 30 minutes, or until beginning to turn golden. Remove from the oven and allow to sit for 15 minutes before serving.

  • 300ml krema doppja
  • 600ml ħalib sħiħ
  • 150g zokkor fin
  • kuċċarina estratt tal-vanilja
  • mgħarfa zokkor żejda u niskata noċemuskata għall-wiċċ

Method

Ibda billi ssajjar it-tuffieħ u s-sultana fil-butir bil-ħwawar għal 5 minuti sakemm tirtab. Sadanittant, poġġi l-krema, il-ħalib, iz-zokkor, u l-estratt tal-vanilja ġo kazzola kbira u kważi għalliha. Neħħi minn fuq in-nar u ħawwad mat-taħlita tat-tuffieħ imsajjar. Wara żid il-kuskus. Ħawwad sewwa, imbagħad ferra’ f’dixx ta’ litru u nofs. Roxx iz-zokkor żejjed u n-noċemuskata u aħmi f’temperatura ta’ 165°C għal 30 minuta, jew sakemm tibda ssir kulur dehbi. Neħħi mill-forn u ħalli joqgħod għal 15-il minuta qabel ma sservi.
