Summer pistachio and cranberry ice-cream sandwiches

Ingredients

  • 250g butter (ICBINB)
  • 200g caster sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 220g plain flour
  • ½ tsp baking powder
  • 45g pistachio nuts
  • 45g dried cranberries
  • You will also need
  • 1 tub pistachio ice-cream (Carte D’or)
  • Melted white chocolate or dark chocolate for dipping

Method

Cream together the ICBINB with the sugar till soft and light. Mix in the egg yolk and vanilla extract. Fold in the flour and baking powder, followed by the chopped pistachios and cranberries. Form into a sausage, wrap in cling film and chill in the fridge for 2 hours. When ready to cook, remove from the fridge and discard the cling film. Cut into ½ inch thick slices and place onto baking sheets lined with baking paper spaced well apart. Bake at 200`c for approximately 20 minutes or until golden around the edges. Cool down completely before sandwiching the cookies together with the ice-cream and half dipping in melted chocolate. Place into the freezer to harden up before serving.

  • isfar ta’ bajda
  • kuċċarina estratt tal-vanilja
  • 220g dqiq plain
  • nofs kuċċarina trab tal-ħami
  • 45g pistaċċi
  • 45g cranberries imnixxfa

Ikollok bżonn ukoll:

  • barmil ġelat tal-pistaċċi
  • ċikkulata bajda mdewba jew ċikkulata skura

Method

Ħawwad flimkien il-butir maz-zokkor sakemm jirtab u jiħfief. Ħallat l-isfar tal-bajd u l-estratt tal-vanilja. Żid id-dqiq u t-trab tal-ħami, segwit mill-pistaċċi mqatta’ u l-cranberries. Ifforma f’zalzett, dawwar bil-cling film u kessaħ fil-fridge għal sagħtejn. Meta tkun lest biex issajjar, neħħi mill-fridge u armi l-cling film. Qatta’ fi flieli ħoxnin ta’ nofs pulzier u qiegħed fuq folji tal-ħami miksija b’karta tal-ħami mifruda sew. Sajjar f’temperatura ta’ 200°C għal madwar 20 minuta jew sakemm tieħu kulur dehbi fit-truf. Kessaħ kompletament qabel ma tpoġġi l-cookies flimkien mal-ġelat u tgħarraq nofs fiċ-ċikkulata mdewba. Poġġi fil-friża biex jibbiesu qabel ma sservi.
