Crispy chicken tenders with curried ketchup

Ingredients

For the chicken tenders
1 large chicken breast, cut into strips
3 tbsp panko breadcrumbs
2 packets sour cream and onion crisps – Twistees (SPA)
3 eggs, beaten
3 tbsp flour, seasoned with salt and pepper

You will also need
3 tbsp ketchup
1 tbsp mayonnaise (Camel brand)
1 tbsp curry powder
Salad leaves for serving

Method

Start by blitzing the sour cream and onion crisps and mix with the panko crumbs. Dip the chicken strips into flour, then beaten egg and finally into the panko mixture. Place onto a baking sheet, drizzle with a little olive oil and bake at 200`c for 8-10 minutes only. Meanwhile, make the curried ketchup by mixing the ketchup, mayonnaise and curry together. To serve, place the salad leaves into 2 bowls and place the crispy chicken tenders on top. Spoon the curried mayo into small bowls and serve on the side.
