Spiced chicken kofta with lemon mint couscous

Ingredients

For the kofta
600g minced chicken
2 tbsp chopped onion
2 tbsp chopped fresh parsley
1 tbs chopped fresh mint
1 tsp ground cumin
½ tsp ground coriander
½ tsp cinnamon
1 tbsp harissa paste
Salt to taste
2-3 tbs breadcrumbs (Lamb brand)
Wooden or metal skewers

For the lemon and mint couscous
1 large onion, chopped
3 cloves garlic, crushed
2 tbsp olive oil (Borges)
Salt and pepper to taste
200g couscous (Lamb brand)
500ml hot stock (Vegetable or chicken)
Juice and zest 1 large lemon
3 tbsp fresh chopped mint
2 tbsp crispy fried onions (Lamb brand)

 

Method

For the koftas, just mix all the ingredients together. Press the mixture onto your skewers tightly and pan-fry or grill till golden brown on all sides. Meanwhile, make the couscous. Fry the garlic and onion in the olive oil for a few minutes, then add in the couscous and coat in the oil in the pan. Add in the lemon juice and zest, hot stock and season with salt. Mix well, put on the lid and allow to cook for 6-8 minutes. When ready to serve, mix the chopped mint into the lemon couscous and serve onto a large plate. Sprinkle over the crispy fried onions and lay the cooked chicken koftas on top.
