Spiced fillet of pork with caramelized apples

Ingredients

  • 1 whole pork fillet
  • 1 tbsp. paprika
  • 1 tbsp. 5 spice
  • 1 tsp ginger mince
  • 1 tbsp. English mustard (Colman’s)
  • 1 tsp honey
  • 2 red apples
  • 1 knob butter (Valio)
  • 1 tsp cinnamon powder
  • 1 tsp ground cloves
  • 1 tbsp. sugar
  • ½ red chili
  • ¼ glass red wine
  • 100g Mediterranean couscous (Tipiak)
  • 200ml hot chicken stock

Method

Mix together the paprika and 5 spice and brush all over the pork fillet. Heat a pan with a little oil and seal the pork on all sides. Mix the ginger, mustard and honey together in a bowl and brush all over the sealed pork. Place into an oven dish and continue to cook in the oven at 180°C for 10 minutes. Meanwhile, quarter the apples, remove the core and sauté in a hot pan with the knob of butter, cinnamon, cloves, sugar and chili to brown. Splash in the wine to evaporate, reduce the heat and allow to simmer to thicken. You can also add the hot chicken stock to the couscous, cover and allow to cook for 5 minutes. To serve, spoon the couscous and apples onto 2 large dinner plates. Slice the pork, lay on top and drizzle the juices around the plate.

Ħallat il-ġinġer, il-mustarda u l-għasel flimkien fi skutella u idlek il-majjal kollu. Poġġi ġo dixx tal-forn u kompli sajjar fil-forn f’temperatura ta’ 180 °C għal 10 minuti. Sadanittant, qatta’ t-tuffieħ fi kwarti, neħħi l-qalba u qalli f’taġen jaħraq bi ftit butir, kannella, imsiemer tal-qronfol, zokkor u bżar aħmar sakemm jismar. Itfa’ l-inbid u ħallih jevapora, naqqas in-nar u ħallih itektek biex jiħxien. Tista’ wkoll iżżid l-istokk sħun tat-tiġieġ mal-kuskus, għatti u ħallih isir għal 5 minuti.
