Summer BBQ sauce crunchy chicken buns with red cabbage slaw




For the crunchy chicken

  • 2 large chicken breasts, skinned and sliced in half
  • 2 tbsp. Greek yogurt
  • 2 cloves garlic, finely chopped
  • 80g panko crumbs
  • 1 tbsp. paprika
  • 1 tbsp. thyme
  • 1 tsp garlic granules
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper

You will also need

  • 80g shredded red cabbage
  • 80g shredded white cabbage
  • 1 carrot, peeled and grated
  • 1 onion, shredded
  • Salt and pepper
  • 2 tbsp. garlic mayonnaise (Hellmanns)
  • 4 tbsp. BBQ mayonnaise (Hellmanns)
  • 2 balls fresh mozzarella di buffalo (Galbani)
  • 1 large beefy tomato, sliced
  • 4 soft burger brioche buns
  • You will also need potato wedges for serving


Start this recipe with the chicken. Season the chicken with salt and pepper. Mix together the Greek yogurt and garlic and coat the seasoned chicken. Allow to marinate for at least 1 hour. Next, mix all of the spices with the panko and season well with salt and pepper. Dip in the marinated chicken and coat well on both sides. Drizzle with olive oil and cook on the BBQ or in the oven. Meanwhile prepare the slaw by mixing together the cabbages, onion, carrot, garlic mayonnaise and season well with salt and pepper. When ready to serve, slice the mozzarella and place over the chicken. Place back over the BBQ grill to melt the cheese. Slice the burger buns, toast and stuff with the chicken. Squeeze over the BBQ mayonnaise, top with sliced tomatoes and the red cabbage slaw. Cover with the bun top and serve with the potato wedges.
