Spicy lentil soup with crispy fried Pita chips

Ingredients

  • 1 onion finely chopped
  • 2 cloves garlic
  • 1 carrot peeled, finely chopped
  • 1 can lentils (Cirio)
  • 1 can passata di pomodoro (Cirio)
  • 1 tsp smoked paprika
  • 1 teaspoon ground cumin
  • Fresh coriander
  • 1 chopped tomato
  • Pita bread wedges (B-Free)
  • Extra virgin olive oil (Borges)

Method

Shallow fry the onion, garlic, carrot together with the spices. Pour in the lentils, cover with enough stock, cook for 10 minutes, whizz into a smooth soup. Fry the pita wedges until crispy. Serve the soup in shot glasses with chopped tomatoes, coriander & crispy Pita chips
