Spiced tiger prawns with melon and cucumber relish

Ingredients

  • 300g raw tiger prawns
  • 1 tbsp mayonnaise (HELLMANNS)
  • Juice of a lime
  • 2 cloves garlic, chopped
  • 1 tbsp red curry paste
  • 1 tbsp chopped fresh coriander and mint

For the melon and cucumber relish

  • 200g water melon, chopped
  • ½ small cucumber, chopped
  • 1 spring onion, sliced diagonally
  • 1 tbsp chopped mint
  • 1 small red chilli, finely chopped
  • Juice of a lime

Method

Start this recipe by preparing the marinade for the prawns. Place the mayonnaise, lime juice, garlic, red curry paste and fresh herbs in a bowl and mix together well. Add the prawns and mix well to coat the prawns well with the marinade. Cover the bowl with cling film and place in the fridge for 30 minutes. Meanwhile, make the relish by mixing all the ingredients together in a small bowl. It is also important to chill the relish for all the flavours to infuse. When you are ready to cook the prawns, thread them onto wooden skewers soaked in water. Drizzle over a little oil and fry in a griddle pan for a few minutes till cooked. You can alternatively cook the prawn skewers on a barbeque. Serve the spiced tiger prawns with the chilled melon and cucumber relish.
