Spiced Bombay potatoes

Ingredients

  • 500g potatoes, peeled and halved
  • 1 jar Bombay Potato sauce (Tesco)
  • 1 tbsp ghee or vegetable oil
  • 2 tomatoes, finely diced
  • Few fresh coriander leaves

Method

Start this recipe by boiling the potatoes in a pan of boiling water until just cooked. Drain, allow to cool down completely then cut into large cubes. Heat the oil in a pan and toss in the potatoes, coating all over. Fry for 5-10 minutes to slightly brown then pour in the Bombay Sauce. Cook for a further 3 minutes to heat up the sauce then serve the Bombay potatoes in a bowl with the diced tomatoes and coriander leaves on top.
