Prawn and feta gluten free pasta with baby spinach and asparagus

Ingredients

  • 8 king prawns
  • 1 small leek
  • 2 cloves garlic
  • 2 knobs butter (President)
  • 1/2 cup fresh cream (Benna)
  • 250g gluten free pasta (Dr Schar)
  • small bunch baby spinach
  • 60g feta cheese
  • 8 asparagus stems
 

Method

On low heat brown the butter, chopped prawns and garlic, then add in the roughly chopped asparagus and shredded leeks, cook for 1 minute than pour in the cream. Boil the pasta and toss add the crushed feta, spinach and keep tossing. Season and serve.
