Sea bass involtini with prawns, tomato and onion salad
Ingredients
- 2 Sea bass fillets
- 200g raw peeled prawns
- Zest of a lemon
- Chopped fresh herbs
- 1 chopped garlic clove
- 1 chopped spring onion
- 1 tsp flour
- 1 egg white
- 1 large tomato
- Basil leaves
- 1 sliced onion
- Olive oil
- 1 kebab stick
Method
Chop the prawns roughly and put in a small mixing bowl. Season with salt and pepper, add the lemon zest garlic, spring onion and flour. Lightly whisk the egg whites and fold in the prawns. Season the fish fillets and roll. Skewer the fish fillet together. Cut the tomato into 2 pieces and place on a baking tray. Season the tomatoes, dress with a basil leaf and onions. Put the fish fillets on top, press your finger in the centre of the involtini to open them slightly. Fill in with the prawn filling and bake for 12 minutes. Searve with a tomato sauce and roasted potatoes.
