Salmon Supreme with a cinnamon mango yogurt dip

Ingredients

For the salmon

  • 2 x 160g salmon fillets
  • 1/2 tbsp cinnamon powder
  • 1/2 mango
  • 4 tbsp Greek yogurt (Mevgal)

You will also need

  • 1 chicory
  • 1/2 glass vegetable stock
  • 1/2 tsp turmeric
  • 1 tsp thyme leaves
  • 1 large potato
  • Small bunch parsley
  • knob butter (President)

Method

In a well preheated sauté pan seal the salmon from all sides and remove from the pan, dice the mango and sauté in the same salmon pan, add cinnamon and toss. remove from heat and allow to cool than mix well with the yogurt, meanwhile finish the salmon in the oven at 180`c. Meanwhile, cut the chicory in segments, remove the bottom part, place in an oven tray, pour in the stock and sprinkle with turmeric and thyme. In the same oven, braise covered until chicory is softened. Use a Parisian spoon to scoop the potatoes, boil until cooked through than toss in salted butter and chopped parsley.
