Queen of puddings

Ingredients

  • 1 ready-made jam Swiss roll
  • 150g mixed berries (raspberries, blueberries, blackberries)
  • 400ml cold pouring custard
  • 2 egg whites
  • 80g caster sugar
  • 6 oven-proof ramekins

Method

Start by cutting the Swiss roll into 12 slices. You need to have two slices for each ramekin. Place a slice of Swiss roll into the base of each ramekin. Next, pour a tablespoon of cold custard in each ramekin, followed by ½ of the mixed berries on top. Put another piece of Swiss roll into each ramekin and the remaining berries on top. Put the ramekins aside while you prepare the meringue. In a medium bowl, whisk the egg whites to soft peaks. Add the caster sugar and continue mixing till you have a thick, smooth meringue. Place spoonfuls of the meringue on top of each filled ramekin, covering the berries and custard completely. Put the ramekins in the oven for 10-15 minutes, at 180`c. The meringue is ready when it just begins to brown on the ends. Take the ramekins out of the oven and serve the queen of puddings immediately while still warm. (Serves 6)

  • 80g zokkor fin (caster sugar)
  • 6 reċipjenti żgħar taċ-ċaqquf (ramekins) li jistgħu jidħlu fil-forn

Method

Qatta’ s-Swiss roll fi 12-il biċċa – irid ikollok biċċtejn għal kull reċipjent. Poġġi biċċa fil-qiegħ, imbagħad itfa’ mgħarfa krema kiesħa f’kull reċipjent u fuqha itfa’ nofs il-frott. Poġġi biċċa Swiss roll oħra fuq dan is-saff u itfa’ l-frott li jkun fadal fil-wiċċ. Warrabhom f’ġenb sakemm tlesti l-meringue. Fi skutella mdaqqsa, ħabbat il-bajd biex itella’ xkuma ħafifa. Żid iz-zokkor u kompli ħawwad sakemm ikollok taħlita magħquda. Itfa’ ftit mit-taħlita fil-wiċċ biex tgħatti l-frott u l-krema biha. Daħħal il-pudini fil-forn f’temperatura ta’ 180oC u aħmihom għal madwar 10 minuti sa kwarta. Il-meringue tkun lesta meta l-wiċċ jibda jiħmar. Oħroġ il-pudini mill-forn u servihom dritt kif ikunu għadhom sħan.
