Pistachio pesto pasta with grilled salmon

Ingredients

For the pesto

  • 1 handful baby spinach leaves
  • 1 handful basil leaves
  • 2 tbsp chopped dill
  • Zest and juice ½ lemon
  • 40g pine nuts
  • 40g pistachios
  • Salt and pepper to taste
  • 50g grated Parmesan cheese (Zanetti)
  • 200-250ml olive oil 

You will also need

  • 60g frozen peas (Emborg)
  • 2 salmon fillets, skin off
  • Drizzle olive oil
  • Salt and pepper to taste
  • 200g tagliatelle pasta (Pasta Reggia)

Method

Start this recipe by making the pesto. Just blitz all the ingredients together and put aside. Meanwhile, heat a little oil in a pan and sear the salmon fillets on both sides. Continue cooking in the oven for 6-8 minutes. Cook the tagliatelle in a pan of salted boiling water, drain and add in the pesto. Coat well and serve into 2 deep pasta bowls with the cook salmon fillets on top. Decorate with dill sprigs and serve.
