Penne with a walnut and chive cream sauce

Serves: 2

Ingredients

  • 100g walnuts, roughly chopped (Lamb Brand)
  • 5 tbsp olive oil
  • ¼ medium red onion, chopped
  • 280ml cream (Elmlea single)
  • 1 tbsp chopped fresh chives
  • 200g penne pasta, cooked (De Cecco)

Method

Roast the walnuts in the olive oil until lightly browned in the oven at 175`c. Next, add the onion to a large pan along with the roasted walnuts and olive oil. Cook until the onion is lightly browned before pouring in the cream. Simmer until thickened before adding in the chopped chives and cooked pasta.
