Linguine with chopped king prawns, apple cider and cherry tomatoes

Serves: 2

Ingredients

  • 8 peeled king prawns
  • ¼ onion
  • 3 cloves garlic
  • ¼ fennel bulb
  • ½ cup apple cider
  • 3 tbsp olive oil
  • 1 tbsp chopped parsley
  • 6 cherry tomatoes
  • 200g linguine pasta, cooked (De Cecco)

Method

Heat the olive oil in a pan and cook the chopped king prawns, garlic, onions and fennel until softened before adding in the cider. Reduce and once thickened add the quartered cherry tomatoes, cooked pasta and chopped parsley and stir well before serving.
