Peanut butter chocolate bars

Ingredients

85g peanut butter (Pip & nuts)
100g honey
5 medjool dates, chopped
1 tsp vanilla extract
40g roasted salted peanuts, chopped
3-4 rice crackers, crumbled
150g dark chocolate (Novi)
2-3 tsp coconut oil
Good pinch coarse sea salt and extra chopped peanuts to decorate

Method

Line an 8 inch square tin with non-stick paper. Place the peanut butter, honey, chopped dates and vanilla over a bain-marie and soften to mix together easily. Add in the chopped peanuts and enough of the rice crackers to form a paste. Spoon into the prepared tin and flatten out. Melt the dark chocolate with the coconut oil and pour over the top, spreading out evenly. Sprinkle over the coarse salt and extra chopped nuts and place into the freezer for 15-20 minutes to firm up. To serve, remove from the freezer and cut into small bars.
