Pasta with Maltese sausage, peas, artichoke hearts and tomato sauce

Ingredients

  • 100g pasta
  • 1 Maltese sausage
  • 50g peas
  • 50g artichoke hearts
  • 100ml tomato polpa
  • 100ml vegetable stock
  • 10ml fresh cream
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 50ml red wine
  • 10ml olive oil

Method

Preheat a pan and shallow fry the chopped garlic and onion for 3 minutes. Gradually add the red wine and reduce by half, followed by the vegetable stock. Reduce the heat and simmer for 5 minutes before adding in the artichoke hearts, Maltese sausage filling, peas and the tomato polpa. Simmer again for 10 minutes and finally add the fresh cream and remove off the heat .Cook the pasta for 7 minutes in boiling water and add to the pasta sauce. Serve immediately.
